Indigo is allowed as a food coloring, but national rules set clear limits on what foods it can go into and how much can be used. In red and green silk, the cap is 0.02 g/kg. For fruit juice (or fruit-flavored) drinks, sodas, prepared wines, sweets, pastries, coated snacks, decorative canned cherries, and green plums, the maximum is 0.10 g/kg. For pickled side dishes, the limit is lower—just 0.01 g/kg.
