Sodium copper chlorophyllin is derived from natural green plant sources, including silkworm excrement, clover, alfalfa, bamboo, and other similar leafy materials. These raw materials are processed with organic solvents such as acetone, methanol, ethanol, and petroleum ether. In the manufacturing process, the central magnesium atom of chlorophyll is replaced with copper, followed by alkaline saponification that removes the methyl and phytol groups, converting them into carboxyl groups and yielding the disodium salt. Consequently, sodium copper chlorophyllin is classified as a semi-synthetic pigment. Other pigments sharing analogous structures and production pathways include sodium iron chlorophyllin and sodium zinc chlorophyllin.
